What is Aussie Select?

Aussie Select is the first fully cooked lamb charcuterie line in the U.S. It brings global flavor and premium quality to the deli, made from pasture-raised Australian lamb and crafted right here in the USA.

What products are available?

We currently offer four signature flavors:

  • Agave Rosemary Lamb – herbaceous, subtly sweet and aromatic.
  • Tikka Masala Lamb – inspired by Indian flavors, mild warmth and depth.
  • Lamb Pastrami – bold, peppery and lean with classic charcuterie cues.
  • Lamb Prime Rib – rich, savory, and exceptionally tender.

All are fully cooked and ready to slice, serve or heat.

Where is Aussie Select made?

Our products are made in Indiana using 100% Australian lamb — known for being grass-fed, free-range and humanely raised. We partner with a co-packed in for production and use premium ingredients with no added sodium nitrites (naturally cured with celery powder).

Is it Halal?

Yes! The entire Aussie Select line is Halal certified, making it inclusive for customers who don’t eat pork or who follow Halal diets. Australian Lamb is Halal when exported from Australia and we take care to maintain that chain in our production processes.

Is it deli meat or charcuterie?

Both! Aussie Select was created to bridge the gap: versatile enough for sandwiches, wraps, salads and flatbreads, but premium enough to star on a charcuterie board. We say “Boards, breads and bites.”

How should it be served?

  • Thinly sliced and layered on boards or sandwiches
  • Wrapped around asparagus or paired with goat cheese
  • In breakfast burritos, grain bowls or mezze platters
    It’s fully cooked — just slice, serve or lightly warm.

What cheeses and wines pair best with Aussie Select?

Because Aussie Select has globally inspired flavors, it pairs beautifully with a wide range of cheeses and wines:

Cheese Pairings

  • Agave Rosemary Lamb: creamy brie, manchego or aged cheddar
  • Tikka Masala Lamb: mild goat cheese, paneer or fontina
  • Lamb Pastrami: sharp provolone, gouda or blue cheese
  • Lamb Prime Rib: aged parmesan, havarti or truffle cheese. Boursin!

 Wine Pairings

  • Reds: Pinot Noir, Malbec or Syrah complement lamb’s richness
  • Whites: Chardonnay or Sauvignon Blanc pair well with lighter flavors
  • For charcuterie boards: try a sparkling rosé or dry prosecco to balance the savory notes

How long does it last once opened?

Once opened, enjoy within 5–7 days for best quality. Keep refrigerated and tightly sealed.

Is it gluten-free and allergen-friendly?

Yes, all varieties are gluten-free and contain no nuts, soy or dairy ingredients (though always check individual labels for processing info).

Who’s behind Aussie Select?

Aussie Select was founded by Jaclyn Oyola, a food entrepreneur dedicated to redefining deli innovation. Her mission: make premium, globally inspired, responsibly sourced proteins more accessible, from chef kitchens to home charcuterie boards.
